Its been pretty wet week here locally.. and I decided to whip up some Seafood Tom Yam Hotpot for dinner.
I have a love & hate relationship with Tom Yam.
I love the spicy hot soup with the pinch of sourness and sweetness from the seafood in it. The spices is rich and its a very special combo. I hate the part when the sourness is overpowering!
Actually.. is Tom Yam supposed to more sour or spicy or equal ratio or even with sweetness in it??? I AM LOST!
Therefore.. you wont actually see me eating this dish when I’m out.. close to never it think. Because I am afraid of the level SOURness. ~_~
Thank God for weekends truly! I get to blog and do many other stuff!! Was working from home before last week and I REALLY MISS MY APRON NOW.
Alright.. Here’s the Menu of the Dinner invite we had two weeks back. Glad to have the honour to have our friends come over. Not if they enjoyed themselves but we surely did. We or rather I love to cook for many. Of cause Husband gotta help me with the dishes and of cause He hates it! However.. I believe his happy too when he see people enjoy the food.
First we have this new recipe I tried… DEEP-FRIED MASHED TOFU! This was surprisingly a big hit on the table. Especially my Husband and Grandma. I like the texture of it. Its really crispy on the outside.. soft and moist inside. Ham added flavour into the plain tofu and the veggies (carrots & spring onion) add the crunch.

Also a new recipe… .. Cream Curry Pan-Fried Chicken! At first glance this reminds everyone of cheese fries! I actually quite like the taste myself. Its a pinch of Curry powder cooked with onions and whipped cream. Its rich and savoury.

This is a must-have dish for my Husband for all dinner invites we have.. Sambal Kangkong. It is also a usual dish that our close friends would ask for when they come over. It has become our “Chef’s special”. It is usually very salty when you eat out. Not sure what the other chefs use but we use our home-made sambal paste.

My family loves all types of steamed fish and this is one that we usually eat when we are out.. Garlic Oil Steamed Fish. Also my first attempt.. I also burn all the garlic while pan-frying them! Garlic Oil is critical for this dish because fish itself does not have much flavour. This is also one of the hit during the dinner. I bought frozen fillet for this because the bones will be messy for our guest. Locals here love fish with bones. To them it means fresh. I am glad the frozen fillet did not fail me.

Last dish is my personal favorite.. Sambal Lala (Clams). I love this to the max.. actually I love all seafood! I can have this one dish and have many bowls of rice with it. Its juicy and chewy! There were some leftovers that got Grandma and I cracking them all up. Its just yummy!

Dessert…. Ice Cream + Brownie. To be honest.. I am bad at Brownie making! It is probably the 2nd or 3rd one I ever made and its still not how I wanted it. I will keep trying!!!!!
